I live in upstate New York. Snow is pretty common for us from November to March. This year seemed particularly crazy with the friggin’ snow, when in reality, it was probably closer to a “normal” winter. Today sucked. Schools closed last night for today. On the way to work it was raining. I thought, “HA! Another blown-out-proportion weather forecast!” Guess what? Joke’s on me. By noon, all unnecessary travel was banned. And It. Hasn’t. Stopped. Snowing. And Mother Nature is giving us a lavish gift of an additional 8″-10″ of snow tonight. Here’s hoping I can get out of the driveway to get to work tomorrow!
Thankfully, everyone I know made it to their destination safely. Now the best thing about negative temperatures…. Chocolate!
For as long as I can remember, my hot chocolate has come from a packet. Sometimes with delicious hard little marshmallows. Sometimes with peppermint schnapps. Today for the first time ever, I made homemade Hot Chocolate for the little people in my house. (Who, by the way, were still in jammies when I got home. Yeah, I’m jealous!) No extravagance here , just the recipe on the side of the unsweetened cocoa powder. Myself, I didn’t get a cup. But the bums under 16yo loved it!
Favorite Hot Cocoa (by those who make delectable Kisses)
- 1/2 C Sugar
- 1/4 C Unsweetened cocoa powder
- Dash salt
- 1/3 C Hot water
- 4 C Milk
- 3/4 tsp Vanilla extract
1. Mix sugar, cocoa and salt in a saucepan, stir in water
2. Cook and stir over medium heat until boiling. Boil and stir for 2 minutes.
3. Stir in milk and heat through. Do not boil.
4. Remove from heat; add vanilla.
