Mondays. Mondays most of the time are very blah for me. I could take ’em or leave ’em. But today, I’m looking at Monday as a fresh start. I got to spend Saturday with some phenomenal women, and for just a short period of time, away from the extra 60lb attachment to my leg. I love her more than my own life, but sometimes it’s nice to be me and the not mommy me. But that was just briefly Saturday. Back to life!
The menu for the week has been worked out with some very healthy meals planned. Fresh start, fresh meals, fresh week! Smiles all around. Scrapbooking and exercise are on the to-do list for the week. And if nothing else, tomorrow is Tuesday.
The buggers are doing great. Well, I don’t really know about great, but they are alive! Minimal arguing, minimal PMS, and homework is getting done in a sort of timely manner.
Out of all the unhealthy dishes that I give in to, burgers are my absolute favorite. I can pass up pizza, steak, tacos, and pasta. I cannot refuse a burger. Mushrooms and a slice of Swiss and I’m in heaven. Simple. I can’t wait for grilling season, just for the burgers! Last week I made turkey burgers. Kid approved turkey burgers at that! No real recipe, mostly done to taste! Even better!
- 1.5lbs Ground turkey
- 1 Egg
- 1/4 C Panko bread crumbs
- sprinkle Italian bread crumbs
- Garlic powder, Onion Powder, Salt, Pepper, Sage and Thyme alllll to taste
Mix all ingredients together, by hand. Has to be by hand, I don’t know why, it’s how my mom did it. (although she used probably 80/20 ground beef) Form into 6 patties. Grill or pan fry until cooked all the way through. Usually a grey/white color. You’ll know.
